My Big Ruckus and little Ruckus did the same thing. I assume your bike has a carb and not fuel injection. Carbs are temperamental in cold weather. When it's cool or cold out, the bike needs a little time to warm up and adjust its automatic choke. By throttling up before the choke adjusts, it is running with the wrong fuel/air mixture, starved for fuel. Thus it shuts off. Instead of starting and instantly trying to speed off, try this.
Turn the throttle two or three times to prime the carb, then start the bike. Let it run for about 20-30 seconds without touching the throttle.
You can then slowly turn the throttle up and down slightly (low enough rpms that the clutch doesn't engage and you move forward). You will hear the bike surge and sputter a little. When the choke adjusts, it will run normally.
